I got out of bed at around noon today but I had been waking up on and off since 9am due to texts from a very excitable Teddy in Boston. Teddy and I have been friends for two years now but he still fails to grasp the concept of time zones. This morning was his Friday evening, and he was very very excited. Teddy was at a rock concert of one of our favourite bands, the Drive-By Truckers. The concert hadn't started yet but he had just got to meet and shake the hand of Mike Cooley, the man responsible for my favourite DBTs song, Space City. I was excited for him but after responding quickly fell back to sleep. Until 10am, when he got to meet Patterson Hood, the other mainstay of the DBTs. Teddy is an unbelievably big music fan, so I can just imagine how giddy he was.
Anyway, when I eventually got up I needed to move. I got showered, dressed, and went grocery shopping, because tonight I was making a special dinner for my Mr Smart. No reason, just because. I grabbed a bottle of Frangelico too. I'd been wanting to try it and Mr Smart texted that it was on special at Woolies. Sometimes I feel like I have my own personal bargain hunter!
I returned home and Mr Smart arrived with Pengi in tow just a few minutes later. He had a bit of homework to do, or so I thought! Before I knew it he had set up a kindle library for my computer and was beginning to set up my new Optus TV Fetch machine! We tried various configurations and eventually found out what needed to go where. Only then did he sit back and do homework, leaving me to tidy and recable everything to my satisfaction. We had a snack somewhere in there too, we shared a tub of roasted garlic hummus with sugar snap peas.
It was only after I'd done all the recabling (which took a good couple of hours) that I realised I still hadn't finished yesterday's blog, so that was next on the list. I'd already started it last night, so it didn't take me long and then I got started on the important task of making dinner! Tonight I attempted something new and exciting! Ceviche! It's fish, cold cooked in lime juice. The recipe is:
Juice of six limes
500g white fish (tuna, snapper, barrumundi, ling)
200g roma tomatoes
1 Lebanese cucumber
1 yellow capsicum
4 tablespoons fresh coriander
1 small can reduced-fat coconut cream
1 tablespoon red wine vinegar
1 tablespoon chilli sause (Sriracha)
Finely dice the fish and place in a large bowl. Pour over the limed juice and mix well to ensure all fish is covered. Cover the bowl with cling film and refrigerate for 20 minutes. De-seed the tomatoes, cucumber and capsicum and finely dice. Place finely diced vegetables in another large bowl. Roughly chop coriander, add to the vegetables and mix well. Serve the vegetable mixture on to 2 - 4 plates if serving as a main or into 6 - 8 ramekins or small bowls if serving as an entree. In a small bowl, combine the coconut cream, vinegar and chilli sauce and mix well. After the 20 minutes has fnished, remove the fish from the refrigerator and drain off any excess liquid. Stir the coconut cream mix through the fish and serve onto the top of the vegetables.
I served ours on a bed of baby kale and it was scrumptious! And it was well received which is always gratifying to the cook.
By the time I had dinner ready, the soccer had already started. It was an exciting match, a one all draw with Sydney in Sydney. Not the best result, but certainly better than a loss. About halfway through the match we started in on dessert. Frangelico on ice.
Mr Smart has his tumbler, and I have mine. We had three glass fulls each and the bottle is now emptied to the monk's belt! I did try one shot of it with a dash of milk, but for once, I think Mr Smart has found a liquor I prefer neat!
After the soccer I started tonight's blog on my laptop and we watched the Pixar Shorts Volume 2 Blu-ray that I purchased yesterday. They were gorgeous as always. I laughed and was cheered and comforted by their messages.
After we'd finished our 'dessert' we started watching Casino Royale but we decided we'd finish it in the morning. The original plan was for it to take us through to the kick off of the Liverpool v. Southhampton match but we both realised we wouldn't make it.
So it's off to bed for us and Pengi!
